The Blue Catfish has a deeply forked tail and white chin barbels. The upper and lower jaws meet evenly, or the upper jaw may project slightly beyond the lower jaw. In body color, the Blue Catfish is light blue.

Adult sizes range from 18 to 24 in. U.S. farm-raised Catfish has a firm texture, white meat with a mild flavor and an excellent source of protein. Catfish are kept alive until processed, making them among the freshest freshwater fish available.
