This cool, sharp condiment is made from tender young ginger roots. Freshly picked ginger is marinated in seasoned vinegar to give it a delightfully pungent taste.
Serve the crisp slivers of ginger chilled. Place a small mound on a plate of sushi or sashimi. Eat a little at a time between different varieties of sushi and at the end of the meal to cleanse the palate.
