Broiled Steelhead Trout With Garlic Herb Butter

There are some nights when I want to spend hours in the kitchen. And then there are the nights when I want something that feels special without the work. This broiled steelhead trout is my answer to those nights.

I love how simple it is. A few minutes under the broiler, a generous pat of garlic herb butter melting over the hot fish, and suddenly dinner looks like something I'd order at a restaurant. The aroma fills the kitchen, and by the time I set the plates down, everyone's already reaching for their forks.

Sometimes the simplest preparations are the most impressive. This broiled steelhead trout comes together in under 20 minutes with minimal fuss. The garlic herb butter melts over the hot fish, creating a rich, flavorful sauce that makes it feel like a special occasion meal but without the special occasion effort.

Broiled Steelhead Trout With Garlic Herb Butter

Ingredients

    • 2 steelhead trout fillets (6–8 oz each, skin-on)

    • Salt and black pepper, to taste

    • 1 tablespoon olive oil

    • 4 tablespoons unsalted butter, softened

    • 2 cloves garlic, minced

    • 1 tablespoon fresh parsley, finely chopped

    • 1 tablespoon fresh chives, finely chopped

    • 1 teaspoon fresh lemon zest

    • 1 tablespoon fresh lemon juice

    • ¼ teaspoon salt

    • ¼ teaspoon black pepper

    Directions

    1. Position an oven rack about 6 inches from the broiler element and preheat your broiler to high. Line a baking sheet with aluminum foil and lightly grease with olive oil or non-stick spray.

    2. In a small bowl, combine the softened butter, minced garlic, parsley, chives, lemon zest, lemon juice, salt, and pepper. Mash together with a fork until well combined. Set aside at room temperature.

    3. Pat the steelhead trout fillets completely dry with a paper towel. (This helps achieve crispy skin.) Season both sides generously with salt and pepper. Brush the flesh side with the olive oil.

    4. Place the fillets skin-side down on the prepared baking sheet. Broil for 6–8 minutes for medium (center slightly translucent) or 8–10 minutes for well-done. The fish should be opaque and flake easily with a fork. The internal temperature should reach 135°F–140°F.

    5. Remove from the oven and immediately top each fillet with a generous dollop of the garlic herb butter. Let it melt over the hot fish for 1–2 minutes. Serve with lemon wedges and extra fresh herbs.
