Directions
Pat the halibut fillets completely dry with a paper towel. Season both sides generously with salt and black pepper.
Place a heavy-bottomed skillet over medium-high heat and add the olive oil. Heat until the oil is shimmering. Carefully place the halibut fillets in the pan, presentation side down. Cook undisturbed for 4–5 minutes, until a golden-brown crust forms. Flip carefully with a spatula and add the 1 tablespoon of butter to the pan. Cook for another 3–4 minutes, basting the fish with the melted butter. The internal temperature should reach 130°F–135°F for medium (slightly translucent in the center) or 140°F for well-done. Remove the halibut to a plate and loosely tent with foil.
Reduce the heat to medium. Add the shallot to the pan and cook for 1–2 minutes until softened. Add the garlic and cook for 30 seconds until fragrant. Pour in the white wine and scrape up any browned bits from the bottom of the pan. Let the wine reduce by half, about 2–3 minutes. Stir in the lemon juice, capers, and the remaining 2 tablespoons of butter. Whisk until the butter is melted and the sauce is smooth. Season with salt and pepper to taste. Stir in the fresh parsley.
Place each halibut fillet on a plate and spoon the lemon caper butter sauce generously over the top. Garnish with lemon wedges and extra parsley if desired.
