Amazing Shrimp Tacos

Ingredients

    • 1 lb large shrimp, peeled and deveined
    • 2 tablespoons olive oil
    • 2 cloves garlic, minced
    • 1 teaspoon chili powder
    • 1/2 teaspoon cumin
    • 1/2 teaspoon paprika
    • Salt and pepper to taste
    • 8 small corn or flour tortillas
    • 1 cup shredded cabbage or lettuce
    • 1 avocado, sliced
    • 1/2 cup diced tomatoes
    • 1/4 cup diced red onion
    • 1/4 cup chopped cilantro
    • Lime wedges for serving

      1. Marinate the Shrimp: In a bowl, combine olive oil, minced garlic, chili powder, cumin, paprika, salt, and pepper. Add the shrimp to the bowl and toss until evenly coated. Let marinate in the refrigerator for at least 30 minutes.
      2. Preheat the Grill: Preheat your grill to medium-high heat (around 375-400°F / 190-200°C).
      3. Grill the Shrimp: Thread the shrimp onto skewers or use a grilling basket to prevent them from falling through the grates. Grill the shrimp for 2-3 minutes per side, or until they are pink and opaque. Remove from the grill and set aside.
      4. Warm the Tortillas: While the shrimp is grilling, heat the tortillas on the grill for about 30 seconds per side, until they are warm and slightly charred. Alternatively, you can warm them in a dry skillet on the stove.
      5. Assemble the Tacos: Divide the shredded cabbage or lettuce evenly among the warm tortillas. Top with grilled shrimp, sliced avocado, diced tomatoes, diced red onion, and chopped cilantro.
      6. Serve: Serve the tacos immediately with lime wedges on the side for squeezing over the top.
