A nostalgic midcentury casserole that's as comforting as it is elegant. This recipe features tender halibut fillets baked over a bed of sweet, caramelized onions and smothered in a rich, tangy cream topping.
Ingredients

2 halibut fillets (6–8 oz each, about 1-inch thick)

1 large yellow onion, thinly sliced

1 tablespoon butter

½ cup mayonnaise

¼ cup sour cream

1 tablespoon fresh lemon juice

1 teaspoon Dijon mustard

1 clove garlic, minced

¼ teaspoon paprika

Salt and black pepper, to taste

½ cup panko breadcrumbs

¼ cup grated Parmesan cheese

1 tablespoon butter, melted

1 tablespoon fresh parsley, chopped (plus extra for garnish)
Directions
Preheat your oven to 400°F. In a skillet over medium heat, melt the 1 tablespoon of butter. Add the sliced onions and cook, stirring occasionally, until they are soft, golden, and caramelized, about 10–15 minutes. Spread the caramelized onions evenly in the bottom of a small baking dish.
Pat the halibut fillets completely dry with a paper towel. Season both sides generously with salt and pepper. Place the fillets on top of the caramelized onions in a single layer.
In a small bowl, combine the mayonnaise, sour cream, lemon juice, Dijon mustard, minced garlic, and paprika. Season with a pinch of salt and pepper. Mix until smooth. Spread this mixture evenly over the top of the halibut fillets.
In another small bowl, combine the panko breadcrumbs, Parmesan cheese, melted butter, and chopped parsley. Mix until the crumbs are evenly coated. Sprinkle the crumb mixture generously over the cream topping.
Place the baking dish in the preheated oven and bake uncovered for 20–25 minutes, or until the topping is golden brown and the fish flakes easily with a fork. The internal temperature of the fish should reach 130°F–135°F for medium.
Remove from the oven and let rest for 5 minutes before serving. Garnish with additional fresh parsley and serve with lemon wedges on the side.
