Ingredients
- 4 steelhead trout fillets (about 6 ounces each)
- 1/4 cup Dijon mustard
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh lemon wedges for serving
- Chopped fresh parsley for garnish (optional)

- Preheat your oven to 375°F (190°C). Lightly grease a baking dish large enough to hold the trout fillets in a single layer.
- In a small bowl, mix together the Dijon mustard, honey, minced garlic, olive oil, salt, and pepper until well combined.
- Place the steelhead trout fillets in the prepared baking dish, skin side down. If the fillets have pin bones, you can remove them with tweezers.
- Spoon the Dijon mustard mixture evenly over the top of each fillet, spreading it to coat the surface.
- Bake the trout in the preheated oven for about 12-15 minutes, or until the fish flakes easily with a fork and the top is golden brown.
- Once done, remove the trout from the oven and let it rest for a couple of minutes.
- Serve the baked Dijon mustard steelhead trout hot, garnished with fresh lemon wedges and chopped parsley if desired.
