Grilled Shrimp Tacos

Ingredients

    • 1 lb large shrimp, peeled and deveined
    • 2 tablespoons olive oil
    • 2 cloves garlic, minced
    • 1 teaspoon chili powder
    • 1 teaspoon ground cumin
    • 1/2 teaspoon paprika
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • Juice of 1 lime

    • 1 cup shredded green cabbage
    • 1/2 cup grated carrots
    • 1/4 cup chopped cilantro
    • 2 tablespoons mayonnaise
    • 2 tablespoons sour cream
    • 1 tablespoon lime juice
    • 1 teaspoon honey
    • Salt and pepper to taste

    • 8 small corn tortillas
    • 1 avocado, sliced
    • 1/2 cup crumbled cotija cheese
    • Lime wedges for serving

      1. In a large bowl, combine olive oil, minced garlic, chili powder, cumin, paprika, salt, pepper, and lime juice. Add shrimp and toss to coat. Marinate for at least 15 minutes.

      1. In a medium bowl, combine red and green cabbage, grated carrots, and cilantro.In a small bowl, whisk together mayonnaise, sour cream, lime juice, honey, salt, and pepper. Pour over the cabbage mixture and toss to combine. Set aside.
