Hogfish with Adriatic Sauce

Light and healthy, pan-seared fish filletdrizzled with a deliciously tasty Adriatic sauce.

Ingredients

4 portions of hogfish
-
Salt and pepper, to taste
-
1ā2 cup fresh cilantro
-
1ā2 cup fresh flat leaf parsley
- 1ā4 cup fresh basil leaf
- Ā 2 cloves garlic
- Ā 1ā2 cup good olive oil
- Ā 2 tablespoons āFire Ciderā
- Ā 1 lemon, juiced
- Ā salt and pepper
Adriatic Sauce:
Directions
Adriatic Sauce:
1. In a food processor, add all of the ingredients for the sauce and puree until velvety.
2. Taste and adjust seasoning with salt and pepper.
- 3. If the sauce is too thick, slowly add more olive oil.
- 4. Serve the sauce at room temperature. The sauce stays well in theĀ refrigerator for up to a week.
Grill the Fish (The fish can be grilled or pan seared.)
- 1. Have your grill hot and clean.
- 2. Lightly season fish.
3. Lightly coat fish with canola oil or spray fish with pan spray.
4. When fish is done, transfer to serving plate, lightly nap the fish with Adriatic sauce.
5. You can serve with a lemon wedge, steamed seasoned quinoa and grilled asparagus.

The āAdriaticā sauce is also an excellent ādipā for crusty bread.
