Mediterranean Mahi-Mahi Tacos

Ingredients

    • 2 Mahi-mahi fillets (about 1 pound total)
    • 2 tablespoons olive oil
    • 1 teaspoon garlic powder
    • 1 teaspoon paprika
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • Juice of 1 lemon

    • 1 cup Greek yogurt
    • 1/2 cucumber, grated and excess water squeezed out
    • 1 clove garlic, minced
    • 1 tablespoon lemon juice
    • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
    • Salt and pepper to taste

    • 4 pita breads or flatbreads
    • 1 cup shredded lettuce
    • 1/2 cup diced tomatoes
    • 1/2 cup diced cucumbers
    • 1/4 cup crumbled feta cheese
    • Fresh dill or parsley for garnish (optional)

    Directions

      1. Preheat the grill or a grill pan to medium-high heat.

        In a small bowl, mix olive oil, garlic powder, paprika, salt, black pepper, and lemon juice.

        Brush the Mahi-mahi fillets with the seasoned olive oil mixture.Grill the Mahi-mahi fillets for about 4-5 minutes on each side or until the fish is opaque and flakes easily with a fork.

        Remove from heat and let rest for a few minutes before flaking into bite-sized pieces.

      1. In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and chopped dill.

        Season with salt and pepper to taste.

        Mix well and refrigerate until ready to use

        Dice the tomatoes and cucumbers.

        Crumble the feta cheese

      1. Lightly warm the pita breads or flatbreads on the grill or in a skillet over medium heat for about 1-2 minutes per side

        Add a layer of shredded lettuce.

        Top with flaked Mahi-mahi.

        Drizzle generously with tzatziki sauce.

        Garnish with fresh dill or parsley if desired
