Stone crab claws are a Florida favorite, known for their hefty shells packed with tender, flavorful meat. This recipe pairs the claws with a tangy mayo-based dipping sauce made with horseradish, Dijon mustard, hot sauce, and lemon juice. Simply mix the ingredients, chill them, and serve alongside the claws on a platter of ice.
The claws are pre-cooked and ready to eat, making preparation a breeze. To access the meat, lightly crack the shells using a claw cracker, hammer, or the back of a butter knife. Then, dip into the sauce and savor each bite.

Ingredients
- 1 cup (7 3/4 ounces; 220g) mayonnaise
- 1/4 cup (2 1/4 ounces; 65g) prepared horseradish
- 1/4 cup (2 1/4 ounces; 65g) Dijon mustard
- 1 teaspoon (5ml) hot sauce, such as Frank's
- 1 1/2 teaspoons (8ml) fresh lemon juice
-
4 pounds (1.8kg) stone crab claws (about 25 medium to large claws), chilled
