Yellow fin Ahi Tuna Poke Bowl

Yellowfin (ahi) tuna is a great source of extra lean protein. It is also low in both saturated fat and sodium. Yellowfin Tuna is a good source of magnesium and has around 350 mg of omega-3's. It is an excellent fish for grilling and searing as well as preparing raw. This Ahi Tuna poke bowl is a delicious dish!

Yellowfin (ahi) tuna is a great source of extra lean protein. It is also low in both saturated fat and sodium. Yellowfin Tuna is a good source of magnesium and has around 350 mg of omega-3's. It is an excellent fish for grilling and searing as well as preparing raw. This Ahi Tuna poke bowl is a delicious dish!

Ingredients

    • 1 lb sushi-grade Ahi tuna, cubed
    • 1/4 cup soy sauce
    • 1 tablespoon sesame oil
    • 1 tablespoon rice vinegar
    • 1 teaspoon honey
    • 1 teaspoon grated fresh ginger
    • 2 green onions, thinly sliced
    • 1 teaspoon sesame seeds
    • 1 avocado, diced
    • 1 cucumber, thinly sliced
    • 2 cups cooked sushi rice
    • 1 tablespoon furikake (optional, for seasoning rice)
    • 1/4 cup pickled ginger (optional, for garnish)
    • 1/4 cup seaweed salad (optional, for garnish)

      1. Start by preparing the sushi rice according to package instructions. Once cooked, let it cool slightly, then stir in the furikake if using. Set aside.
      2. In a mixing bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, and grated ginger to make the marinade.
      3. Add the cubed Ahi tuna to the marinade and gently toss to coat. Cover the bowl and refrigerate for at least 15 minutes to allow the flavors to meld.
      4. While the tuna is marinating, prepare your toppings. Dice the avocado, slice the cucumber thinly, and chop the green onions.
      5. Once the tuna is marinated, assemble your poke bowls. Start with a base of sushi rice in each bowl.
      6. Top the rice with marinated Ahi tuna, then add the diced avocado, sliced cucumber, and green onions.
      7. Sprinkle sesame seeds over the top of each bowl for added texture and flavor.
      8. Optionally, garnish the bowls with pickled ginger and seaweed salad for additional taste and presentation.
      9. Serve immediately and enjoy your delicious Ahi Tuna Poke Bowl!
