Directions

1. Line a cast iron pan with olive oil. Spray with non-stick spray.

2. Heat to almost smoking.

3. Rub the salmon filet with olive oil. Season with kosher salt and black pepper.

4. Once the pan is hot, place the salmon filet flesh side down

5. Allow the salmon to form a crust

6. While the salmon is searing, combine all of the ingredients for the lime honey butter.

7. Turn down the heat just a touch

8. Flip. Allow the skin to crisp.

9. Reduce heat to medium-low.

10. Place a layer of the lime honey butter on top of the salmon. 

11. Allow to cook for just a few more minutes to allow the honey to drip down and caramelize.

12. Continue layering on the butter. Use it all up.

13. Plate and serve with your favorite sides.
